I want to get into papercraft, but i just can't quite get the folds right. I'd never be able to do something like this.

It is just practice. I started with building houses, then i start building animals, and then pokemon models.
That is my advice to you:
"Start with something small to make something big."
If you need help with making any pokemon model, just leave a note and i ll try to point you in right direction.w
